Asparagus ”Fries” by STIR

Asparagus ”fries”?  …yes please

These delicious nibbles will disappear quickly as an appetizer or tasty side dish!

 

Ingredients

-large bunch of asparagus, washed and trimmed

-1 egg

-1Tbsp. Dijon mustard

-1 Tbsp.lemon juice

¾ cup whole wheat panko crumbs

zest of lemon

¼ tsp. red chili flakes

1 tsp. sea salt

½ tsp. pepper

 

Lemon Alioli

1Tbsp. Dijon mustard

3 Tbsp. plain greek yogurt

1Tbsp. olive oil

1 tbsp. lemon juice

salt and pepper

 

Method

-preheat oven to 400

-line a baking sheet with foil and lightly oil

-combine egg, Dijon, lemon and whisk together

-combine breadcrumbs, lemon zest, pepper, salt and pepper

-coat asparagus in egg mixture, then crumb mixture and place on baking sheet

-bake until golden brown and asparagus is still firm

-mix alioli ingredients together and enjoy dipping!
