Asparagus Nettle Soup


A delicious pair, these veggies are in their prime now. Enjoy them together in this delicious, healthy spring soup!



½ lb. fresh asparagus

3 Tbsp. fruity olive oil

1 med. onion, chopped

2 med. leeks, white plus 2cm green, chopped

3 med. potatoes, peeled, diced

1/3 cup tender nettle leaves [spinach or arugula substitutes]

2-3 litres vegetable stock

sea salt, pepper, lemon juice



-slice asparagus into 2 cm pieces, reserve the tips

-heat oil in large pot  and sauté onion, leeks and potatoes,10min.

-add stock and simmer for 10 min.

-add asparagus and nettle and simmer for another 10min.

-cool slightly and puree with a hand blender

–simmer over medium heat to desired thickness, add asparagus tips and simmer for 3 min.

-season with lemon juice, salt and pepper


Optional: add a swirl of cream, top with fresh herbs such as tarragon or mint or some shaved parmesan.
